Plain vanilla cake


Ingredients

For 8” square or 7“ round tin

Butter – 2 and a half cup or 350 g
Sugar– 2 and a half cup or 350 g
Vanilla- 1 spoon
Eggs- 3
Plain flour – half cup
Sour cream/greek yogurt -200g
Self raising flour – 2 and a half cup or 350 g
Milk – 3tbl spoon

You can use plain flour instead of self raising. In that case just add 1tbl spoon of baking powder.

Procedure

  1. Heat oven to 160C. 
  2. Beat the butter, sugar, vanilla and ¼ tsp salt together until pale and fluffy, then pour in the eggs, one at a time, giving the mix a really good beating before adding the next. Add 1 tbsp of the plain flour if the mix starts to look slimy rather than fluffy. Beat in the yogurt.
  3. Mix the flours; then, using a large metal spoon, fold them into the batter, followed by the milk. Spoon the mix into the tin and bake for 1 hr 20 mins 
  4. Pour some juice over the top to make it flavoured.
