Ingredients
For 8” square or 7“ round tin
Butter – 2 and a half cup or 350 g
Sugar– 2 and a half cup or 350 g
Vanilla- 1 spoon
Eggs- 3
Plain flour – half cup
Sour cream/greek yogurt -200g
Self raising flour – 2 and a half cup or 350 g
Milk – 3tbl spoon
You can use plain flour instead of self raising. In that
case just add 1tbl spoon of baking powder.
- Heat oven to 160C.
- Beat the butter, sugar, vanilla and ¼ tsp salt together until pale and fluffy, then pour in the eggs, one at a time, giving the mix a really good beating before adding the next. Add 1 tbsp of the plain flour if the mix starts to look slimy rather than fluffy. Beat in the yogurt.
- Mix the flours; then, using a large metal spoon, fold them into the batter, followed by the milk. Spoon the mix into the tin and bake for 1 hr 20 mins
- Pour some juice over the top to make it flavoured.
