Ingredients
2 1/3 cups all purpose flour
3/4 cup sugar
2 1/2 tsp baking powder
1/2 tsp salt
2 large eggs
1 1/2 cups mashed bananas (use a potato masher or a fork), about 3-5 bananas
8 tbsp (1 stick) unsalted butter, melted
2 tsp vanilla extract
handful of raisins, tossed with about 1 tbsp of flour
Instructions
- preheat oven at 170C.
- stir together the flour, sugar, baking powder and salt.
- In another bowl, whisk the eggs to break them up. Whisk in the bananas, then whisk in the butter and vanilla extract until smooth.
- Pour the liquid ingredients into the bowl of dry ingredients and use a large rubber spatula to fold them in. Fold in the floured walnuts or chocolate chips. Don't overmix.
- Scrape the batter into the prepared pan and smooth the top.
- Bake the bread for 55 to 60 minutes.
