Banana loaf






Ingredients
2 1/3 cups all purpose flour
3/4 cup sugar
2 1/2 tsp baking powder
1/2 tsp salt
2 large eggs
1 1/2 cups mashed bananas (use a potato masher or a fork), about 3-5 bananas
8 tbsp (1 stick) unsalted butter, melted
2 tsp vanilla extract
handful of raisins,  tossed with about 1 tbsp of flour 

Instructions
  1. preheat oven at 170C.
  2.  stir together the flour, sugar, baking powder and salt.
  3. In another bowl, whisk the eggs to break them up. Whisk in the bananas, then whisk in the butter and vanilla extract until smooth.
  4. Pour the liquid ingredients into the bowl of dry ingredients and use a large rubber spatula to fold them in. Fold in the floured walnuts or chocolate chips. Don't overmix.
  5. Scrape the batter into the prepared pan and smooth the top.
  6. Bake the bread for  55 to 60 minutes.
